- 1 medium onion, finely chopped
- 2 tbsp vegetable oil
- 1–2 stock cubes
- 1 tsp thyme
- ½ tsp curry powder
- Salt and pepper to taste
- 2 tbsp flour
- 250ml water
Instructions
1. Prepare the Filling
- Heat oil and sauté onions until soft.
- Add minced beef and cook until browned.
- Add potatoes, carrots, thyme, curry powder, stock cube, salt, and pepper.
- Add water and simmer until vegetables soften.
- Mix flour with a little water to form a slurry and stir into the filling.
- Cook until thickened, then allow to cool completely.
2. Prepare the Pastry
- Combine flour, baking powder, and salt.
- Rub in cold butter until the mixture resembles breadcrumbs.
- Add one beaten egg.
- Gradually add cold water and mix into a firm dough.
- Chill for 20–30 minutes.
3. Assemble
- Roll dough to about 3–4mm thickness.
- Cut circles using a bowl or cutter.
- Place filling in the center.
- Fold over into a half-moon shape.
- Seal edges with a fork.
4. Bake
- Brush with beaten egg.
- Bake at 180°C (fan-forced) or 200°C conventional for 25–30 minutes until golden brown.
