Pastry

  • 500g plain flour
  • 250g cold butter or margarine
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 eggs (1 for dough, 1 for egg wash)
  • 120–150ml cold water

Filling

  • 500g minced beef
  • 2 medium potatoes, diced small
  • 2 medium carrots, diced small
  • 1 medium onion, finely chopped
  • 2 tbsp vegetable oil
  • 1–2 stock cubes
  • 1 tsp thyme
  • ½ tsp curry powder
  • Salt and pepper to taste
  • 2 tbsp flour
  • 250ml water

Instructions

1. Prepare the Filling

  1. Heat oil and sauté onions until soft.
  2. Add minced beef and cook until browned.
  3. Add potatoes, carrots, thyme, curry powder, stock cube, salt, and pepper.
  4. Add water and simmer until vegetables soften.
  5. Mix flour with a little water to form a slurry and stir into the filling.
  6. Cook until thickened, then allow to cool completely.

2. Prepare the Pastry

  1. Combine flour, baking powder, and salt.
  2. Rub in cold butter until the mixture resembles breadcrumbs.
  3. Add one beaten egg.
  4. Gradually add cold water and mix into a firm dough.
  5. Chill for 20–30 minutes.

3. Assemble

  1. Roll dough to about 3–4mm thickness.
  2. Cut circles using a bowl or cutter.
  3. Place filling in the center.
  4. Fold over into a half-moon shape.
  5. Seal edges with a fork.

4. Bake

  1. Brush with beaten egg.
  2. Bake at 180°C (fan-forced) or 200°C conventional for 25–30 minutes until golden brown.
